Keybindings for menu items in any gtk app can be changed/set
by hovering over the menu item with the mouse and pressing the keys.
This was turned off by default in gnome2, but you can reenable it like:
gconftool-2 -t boolean -s /desktop/gnome/interface/can_change_accels 1
